Vegan Candy Corn

Vegan Candy Corn
Its almost Halloween everyone!! ...and the most recognizable candy has got to be candy corn! We all have very strong opinions on whether we like it, love it, or loathe it completely. There really is no in between but what we can agree on that getting candy regardless of types, is better homemade than the processed kind. Why not have a better option, instead of chemicals and preservatives. This recipe shows you how to step by step make perfectly addictive (and may convert some of the corn haters), vegan candy corn. With a few ingredients, some elbow grease, and a sticky ingredients you can make your own. Customize it to anything you can think of. Have a fav sports team? Favorite flavor? or want to have it special for a party/event, you will not be disappointed. Just remember to make enough and have fun with it. Nothing is better than playing with your food and getting a sweet treat in the end of it all. Enjoy!
Vegan Candy Corn

Ingredients

1 cup sugar
2/3 cup organic corn syrup or agave
5 tablespoons vegan butter
1 teaspoon extract (flavored extracts you would like)
2 1/2 cups powdered sugar
1/3 cup soy protein isolate powder
Food coloring (varies)

Directions

In a large saucepan, bring the sugar, syrup, vegan butter, & extract to a boil over high heat. Reduce the heat to medium & boil the mixture for 5 minutes, stirring occasionally. You want the mixture to mix and the sugar to melt. After the 5 minutes, remove from heat.

In a measuring cup or bowl, mix the powdered sugar and soy isolate together. Add the powdered sugar mixture to hot sugar mixture & stir to combine. This will take a little elbow grease and be VERY CAREFUL! Once the mixture combined and is done, let it rest for 15 to 20 minutes. You want to cool it down so you can handle it. Once it's cooled down, divide the dough into 3 equal pieces. This will be your 3 color layers.

*At this point you may want to wear gloves so the mixture doesn't stain your hands. OR use a stand mixer, much easier.

Add several drops of the colored dye of your choosing to one piece of dough & knead food coloring into the dough until smooth and color is even, no white spots. Repeat using the other food coloring with the second piece. If you want you can leave the last piece the regular color or dye it as well. Just make sure to knead it until smooth like the others.

*This will take some time and real elbow grease, so be patient and have a dear, makes it easier.

When all your dough has been colored you can roll each piece into ropes of equal length (CAREFUL NOT to roll it too thin or it will break). When it's rolled out, make it equal length, and push the three ropes together to form a long rectangle.

Using a very sharp knife, cut the ropes into triangles. This tipped edges will change from one to the next. Just keep going down the line crisscrossing the cuts. You can make these the size and shape you want if it's desirable, either way the outcome will taste the same. Change up the extracts and colors to customize it all your own. Enjoy!

*I apologize for the lack of pics in this one...you forget this is a messy job and candy making and taking pics don't go hand in hand...I think I needed a spotter. Oops! Next time, promise!
