Vegan Beef Carnitas
Ingredients
2 packages Beyond OR Impossible steak pieces, or your favorite vegan steak brand (if whole vegan steaks, chunk or slice)
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon ground cumin
1 onion, peeled and halved
1 Tablespoon Vegan bacon bits
2 bay leaves
1 teaspoon dried oregano
2 Tablespoon fresh lime juice
2 Cups water
1 medium orange, juiced and keep the spent halves
Directions
Preheat oven to 300 degrees. Combine all the ingredients in a large Dutch oven, including the spent orange halves and juice. Cover and cook for about 2 hours. When the 2 hours are up, remove and discard bay leaves and oranges from the pot. Leaving cooking liquid and onions.

Remove the pot from the oven and turn on the broiler. Use a slotted spoon to remove the vegan beef tips from the pan and place it on a foil-lined sheet pan.

Place pot over high heat on the stove and boil until thick and syrupy, about 15-20 minutes. You should have about 1/2-1 cup of liquid remaining when it is finished.
Once the liquid has become a syrup, gently fold in the pieces of vegan beef tips into the pot. Taste and add additional salt and pepper if needed. Serve family-style with tortillas and your favorites sides of rice and veggies. Even better leftover the next day and perfect for a party to impress with big flavor. Enjoy!
