| Vegan Cadbury Creme Eggs |
When you think of Easter you usually picture the Cadbury commercials and all the chocolate advertisement. Easter and chocolate go hand in hand, for kids and adults alike. Vegans enjoy it as well, but the Cadbury Creme Egg isn't quite a vegan treat, but with this recipe you and your family can enjoy the same great taste without the animal products. Creamy on the inside and chocolaty on the outside you are ready for the holidays and for your sugar coma. Great gift for kids and/or adults and pretty served on Easter. Enjoy!
Vegan Cadbury Creme Eggs
Ingredients
-1/2 cup light corn syrup
-1/4 cup (1/2 stick) vegan butter or shortening, softened
-3 cups powdered sugar
-2 teaspoon pure vanilla extract
-1/8 teaspoon Yellow food coloring (more or less depending on how yellow you want the yolk)
-2 Bags Vegan Chocolate Chips (I used Mini's: 10 ounce bags)
Directions
In the bowl of a mixer, cream the vegan butter, corn syrup and vanilla until smooth. Add the powdered sugar and beat on medium low speed until well mixed. Spoon 1/3 cup of the filling mixture into a separate bowl and color it with yellow food coloring. Refrigerate the white and yellow filling mixtures for an hour or so, for easier handling.

Roll the yellow mixture filling into balls using a 1/4 teaspoon measure and place on a wax paper lined baking sheet. Place in the freezer for 20 minutes or so. If you want to make it easier I used a little oil or cooking spray and powdered sugar on my hands to roll them easier, they are sticky.

Remove from freezer and cover with white candy and form into an egg shape. You will want to roll the white (1 Tbsp) into a ball and make a thumbprint in the middle, place a yolk in the imprint and roll the white over and roll the whole thing into a ball again. You can make them flat or round. Freeze eggs for about 30 minutes.

Melt your vegan chocolate (I used a chocolate pot for melting but you can do it over a double boiler or in the microwave). Place eggs in the chocolate and coat completely. Remove and place back on wax paper lined baking sheet. You will want to do this pretty quick, because the filling gets soft, don't stress if they aren't perfect because it all tastes the same. Place in the refrigerator until chocolate has set.

If you want the eggs to be runnier like traditional Cadbury Eggs, keep at room temperature. The candy mixture in the eggs softens up and be ready to serve. Great as a gift in any kids Easter basket...or adults! Enjoy!
